Step 1
Pre-heat the oven to 180°C. Combine the baked beans and baby spinach in a small casserole dish. Crack the eggs into the beans.

Place the casserole dish into the oven and bake for around 7–10 minutes, depending on how soft you want your egg yolks.

Serve and top with cubed avocado.
