Getting back into exercise after lockdown? Here are some tips to get the best from it.

Note

  • For an additional flavour hit and some colour, add 2 cups halved cherry tomatoes.
  • How to poach chicken breast: bring water in a saucepan to a simmer, add chicken for 8-10 minutes or until the chicken is just cooked through, shred with a fork.
  • This dish can also be frozen in an airtight container and kept for later use (up to 2 months). To defrost, place container in the refrigerator to thaw slowly overnight.

  1. Step 1

    Pesto: Place all pesto ingredients in a blender and process until smooth.

  2. Step 2

    Pasta: Cook pasta according to package instructions. Once cooked, drain pasta and return to pan.

  3. Step 3

    Stir through prepared chicken, spinach and pesto.

  4. Step 4

    Return pan to heat and cook over medium heat for 4-5 minutes or until heated and spinach slightly wilted.

  5. Step 5

    Serve with the 2 tbsp grated parmesan and shredded basil.
