Pancakes with yoghurt, honey and fruit

Heart-healthy food tip: Research shows that insoluble fibre – particularly from cereal grains and vegetables – has the best effect on reducing the risk of cardiovascular and coronary heart disease.

Ingredients

Directions

  1. Step 1

To make the pancake mixture, combine the flour, oat bran, milk, egg and salt in a bowl and mix with an electric beater on high for 1–2 minutes until smooth.

  2. Step 2

Heat a non-stick pan over medium heat and pour in 1/4 cup of pancake mixture. Cook for 2 minutes or until lightly golden and flip over to cook the other side.

  3. Step 3

Remove from the pan and set aside. Repeat with the remaining mixture until all pancakes are cooked.

  4. Step 4

Top each pancake with a dollop or two of yoghurt, strawberries and a drizzle of honey. Serve and enjoy!
